Honey lozenges
I love these honey lozenges which are perfect to soothe a scratchy throat. The trick is to get the honey to 150C for it to set into a hard lozenge.
Honey ginger and lemon lozenge recipe
15g ginger
1 1/2 cup filtered water
3/4 cup honey
5 drops essential oil (lemon or eucalyptus, just make sure that the essential oil you choose is ok to consume internally).
Heavy based saucepan
Candy thermometer
Mould or baking paper
Place ginger sliced thinly and water in a saucepan. Simmer covered for 1/2 hour. Use 3/4 cup of the infused water (remove ginger) and add honey.
Heat over medium heat until mixture begins to boil. Stir constantly to make sure it doesn’t stick to the pan and burn. Clip candy thermometer to the side of your pan. Continue to boil until mixture reaches 150C. Let mixture cool and continue stirring for 5 minutes until it starts to get syrupy. Add essential oil.
Drop by small spoonfuls onto baking paper or pour into a mould.
Store in an airtight container in the fridge.
